The Brief

During the snowy month February, Valley Table sent me an assignment to shoot for spring, possibly summer: three bakeries spanning across the Hudson Valley in two weeks – Breadfolks, Kingston Bread Co., and LMNOP Bakery. The goal? Shoot for the cover!

What I Did

Three bakeries, three stories.

The first: LMNOP Bakery || From fashion and millinery to baking, Anne Mayhew transformed her career from broadway to baking with her bakery LMNOP in Westchester. Of course, you can go to Valley Table to read the article and more about her story, but on the day I met her, it went from snow to sun, from dough to steam to bread. It’s just her and her assistant baker on even given day making the many loafs they sell wholesale, and the variety is quite lovely. Most of the breads I took home were sourdoughs, but that day, they were making some time of chocolate rolls. Clearly, I need to head back for more soon.

The Second: Breadfolks || On a cold snowy morning in February, I had the honor of capturing Norman Jean Roy’s meticulous, yet artful approach to baking at Breadfolks in Hudson, NY. Originally known for his famed photographic career, Norman shifted his interest in baking and enrolled in the San Francisco Baking Institute, where he developed his precision and passion for high quality breads and pastries. How good is it? On any given day, Breadfolks has a line down the block. My foodie heart melted with every bite of his pastries, breads, and sandwiches.

The Third: Kingston Bread Co. || So much bread, not enough time. We had to cancel three times from the snow, and when I finally got up there, I only had a few minutes to capture their process, but oh, I took so many loaves home and wow!
